The freshly picked Baby Pak Choi has such a lovely flavour it often ends up in a spring salad bowl instead of the traditional uses of stir-fires and soups. This baby variety of Pak Choi rapidly produces cute and chubby mini heads have crispy pastel stalks and deep green leaves and are ready to eat in record time. Perfect for both spring or fall planting, and very ornamental in neat garden beds or rows, the 15-20 cm compact, vase-shaped heads are mild, sweet, and crunchy. This fast, easy to grow vegetable makes wonderful quick stir-fries, or braise it for a succulent side dish.

Direct sow: In very early spring as soon as the ground can be worked, prepare a well-drained, fertile garden bed in full sun. Sow seeds 5 cm apart in rows spaced 15-20 cm inches apart. Cover 8 mm deep and keep soil evenly moist to ensure good germination. Sow every 2-3 weeks until late June. Sow again in late summer for another fast-growing fall crop.

Sow Indoors: Sow seeds in a container of seed starting mix 5 cm apart and cover8 mm deep. Keep moist and provide a strong light source until seedlings are about 10 cm tall and ready to plant in the garden.

Seeds germinate in 5-10 days

Space seedlings 5 to 6 inches apart to give plants room to mature.

Pak Choi thrives in rich soil and cool growing conditions. Be sure to thin seedlings and mulch well to keep weeded, and keep moist for best tasting crunchy heads. Feed 2 or 3 times during the growing season with fish emulsion or other high nitrogen fertilizer.

Use early thinnings in your salads. Cut whole little heads when they are plump and well filled out.

We enjoy a large variety of Oriental vegetables in our gardens. Many years ago, several varieties were planted in our Oriental Garden.  As an avid seed saver, seeds were harvested but some plants were left to over-winter. To our amazement and delight, every spring new cabbages of almost every variety emerge in our Oriental Gardens.  Now when volunteer seedlings emerge every year and are established, we gently lift the young plants to transplant them into rows. When you grow Oriental Cabbages, provided you have the room, you might like to allow one or two plants to develop seeds and self-sow and enjoy the same result.
