This traditional heirloom spinach has thick, succulent, dark-green savoyed (crumpled leaves) that are very sweet in salads or cooked. It is best planted in early spring and fall. If fall-planted, it will overwinter and produce much earlier than if it is spring-planted. Planted in a row tunnel in fall and you can expect baby spinach in late April to mid-May. If you have never grown spinach before the taste and freshness will win you over. Pick individual leaves from the outer edges of the plant as they become big enough to use, or cut the whole plant 2.5 cm above the ground, and new leaves will be produced. Harvest before the plant sends up a flower stalk.

The secret to great spinach is to thin seedlings to 6-10 cm apart.

Sow seeds 12 mm deep and 3-5 cm apart. If planting in row plant rows 30-45 cm apart. Start planting as soon as the ground can be worked. Sow every 14 days until late June. In mid-late August sow for fall harvest. Mid to late October, so for following spring crops.

Seed saving: Early spring plant 4-6 seeds, in a sunny location, apart from the main crop (if possible). Do not harvest leaves these seeds, let them send up their flower stalks. When the flowers are finished blooming and the seeds are well-formed, cut the stalk at soil level. (Usually mid-July) Remove leaves and discard, hang the stalk to dry in a breezy location. Within 3-5 days, the seeds will be dry enough to remove and place in a paper bag. Use these seeds for your August and October sowing, saving enough for the following year.

For summer harvesting of spinach simply sow seeds on the north side of cover plants like tomatoes. This will help protect them from the summer sun.
