Ping Tung is the name of the town in Taiwan where it originated, making it an excellent variety for Asian cuisine. The fruits are light purple, from 30-45 cm long, and only 3 cm in diameter. Hardy, disease-resistant plants bear up to 20 sweet and tender fruit per plant. Stake the bushy plants for the straightest fruits. Eggplants thrive in containers, provided the soil is kept moist especially during the hottest days when they are fruiting. The plants work well in the open field and raised beds but benefit from full sun and wind protection. Eggplants grow best in heat.

Start eggplant indoors 6-9 weeks before the average last frost. Soak seeds first to encourage germination and then sow 5 mm deep. Using bottom heat for a week to 10 days will help with sprouting. Transplant when the soil has warmed in a location that gets 8-10 hours of direct sun. If growing eggplant in raised beds or containers, keep the plants well-watered.
Space 45-70 cm apart in the garden.
If growing in containers use large container-approx. 3 plants per 5-gallon container.
All eggplant varieties are short season (60-70 days to maturity from transplant), open-pollinated, and organically grown.
Eggplant should be started 6-9 weeks before the last frost.
